Açaí Fish Glaze
Who thought that açaí is only meant to be used to make smoothie bowls and desserts? We absolutely LOVE this savoury fish glaze with açaí as the main ingredient. It goes really well with white fish, adding a rich, flavourful taste with a beautiful purple shade. The best part – pretty much all specialized dieters out there (ie; gluten free, diabetic, keto, paleo, low carb, low FODMAP, SIBO specific, lectin free, etc…) can enjoy this delicious and nutritious dish. And you can easily substitute the ghee for olive oil if you’d like a vegan version to go over your tofu dish instead!
- 2 packs of our frozen açaí purée (thaw by running packs under hot water)
- 2 tablespoons of ghee
- ¼ cup finely chopped onion
- A few dashes of balsamic vinaigrette (or red wine if you’d like to get fancy!)
- Salt and pepper to taste
- Cayenne pepper to taste
- Sprinkle of garlic powder
- ¼ cup chopped mint
- A few fillets of white fish (your choice between haddock, halibut, tilapia, cod, catfish, etc…)
Instructions for glaze:
- Heat ghee in a saucepan until it becomes a liquid form.
- Add the chopped onions, salt, pepper and cayenne pepper and sauté until slightly brown, about 5 minutes.
- Add the açaí purée pouches and balsamic vinaigrette. Stir until the puree is fully melted.
- Reduce heat to just below medium and let simmer, stirring occasionally for about 10 minutes until the glaze thickens to a desired consistency.
- Set aside until fish is ready.
Instructions for fish:
- Sprinkle salt, pepper and garlic powder over your raw fish prior to cooking.
- Google basic baking recipes for your type of white fish for the most accurate instructions. We like to bake our fish in the oven, but you can also fry or barbecue, as you wish.
- When the fish is fully cooked, put on your dinner plates and spoon the açaí glaze over your cooked fish.
- Add chopped mint on top of the glaze to garnish and serve with your favourite side.
